Egg Fried Rice

A classic Chinese fried rice with eggs, scallions, and peas. Fast, comforting, and much better than sad leftover rice deserves.

Instructions

  1. Break up the chilled rice with your hands or a spoon so the grains are loose and separate.
  2. Heat a wok or large skillet over medium-high to high heat. Add 10 ml of the oil, then pour in the beaten eggs. Scramble gently until just set, then transfer to a plate.
  3. Add the remaining oil to the wok. Add the rice and stir-fry for 2 to 3 minutes, pressing out any clumps and tossing until the grains are hot and lightly toasted.
  4. Add the peas and the white parts of the scallions. Stir-fry for about 1 minute.
  5. Return the eggs to the wok. Add the light soy sauce, Shaoxing wine or water, salt, and white pepper. Toss well until everything is evenly coated and hot.
  6. Turn off the heat and stir in the scallion greens. Add the sesame oil, if using.
  7. Serve right away.
