Jamaican Beef Patties

Instructions

  1. Make the pastry. Mix the flour, salt, sugar, turmeric, and curry powder in a bowl. Rub in the cold butter until the mixture looks shaggy with a few pea-sized pieces left.
  2. Add the ice-cold water a little at a time and mix just until the dough comes together. Form into a flat disc, wrap, and chill for 30 minutes.
  3. Make the filling. Heat the oil in a frying pan over medium heat. Add the beef and cook for 3 to 4 minutes, breaking it up as it cooks.
  4. Add the onion, garlic, scallions, thyme, allspice, curry powder, Scotch bonnet, black pepper, Worcestershire sauce, and salt. Cook for 3 to 4 minutes until fragrant.
  5. Pour in the stock or water and simmer for 2 to 3 minutes. Stir in the breadcrumbs and butter, then cook for 1 minute more until the filling is moist but not wet. Let it cool fully.
  6. Heat the oven to 200°C. Line a baking tray with baking paper.
  7. Roll the chilled dough to about 3 mm thick. Cut into 14-15 cm circles.
  8. Spoon some filling onto one half of each circle, leaving a border around the edge. Brush the edge lightly with beaten egg, fold over, and press to seal. Crimp with a fork.
  9. Place the patties on the tray and brush the tops with beaten egg.
  10. Bake for 25 to 30 minutes until golden and crisp.
  11. Cool for a few minutes before serving. The crust should be flaky and the filling savory with a little heat, not dry enough to qualify as punishment.
