Lebanese Jallab Beverage
Lebanese jallab is a chilled Levantine drink made with dark syrup, floral notes, ice, and the very sensible addition of pine nuts on top.
Instructions
- Add the date molasses, grape molasses, rose water, and orange blossom water to a pitcher. Whisk until smooth.
- Pour in the cold water gradually, whisking well so the molasses dissolves fully and the drink turns an even deep amber-brown.
- Taste and adjust if needed. Add a little more water for a lighter drink, or a little more date molasses for a richer one.
- Fill 4 tall glasses generously with ice.
- Pour the jallab over the ice and stir each glass once or twice.
- Top with pine nuts and golden raisins just before serving so they stay distinct and do not go soggy too quickly.
- Serve immediately, very cold.
Cultural Context
Jallab is widely enjoyed across the Levant, including Lebanon, and is typically served cold over ice. Common descriptions of the drink center on a dark syrup made with date syrup or molasses, often grape molasses, and rose water, then finished with pine nuts and sometimes raisins. It’s especially enjoyed with warm weather and at Ramadan tables.
Fun Fact
The garnish is not just decoration. In many descriptions of jallab, pine nuts and raisins are treated as a defining part of the drink, which is delightfully extra in the best possible way.
Cook’s Tip
Jallab is commonly made with a syrup base flavored with date syrup or molasses, rose water, and often grape molasses, though formulas vary across households and brands. Pine nuts and raisins are classic garnishes and part of what gives the drink its familiar look and texture.
Use very cold water and plenty of ice. Jallab should taste refreshing and lightly floral, not thick or heavy. If grape molasses is hard to find, you can make a simpler home version with just date molasses, though the flavor will be a little rounder and less layered.
Trivia
Depending on the region or household, jallab syrup may include dates, grapes, or even carob, which is one reason its recipes vary more than people expect.
