Mom’s Manitoba Meatloaf
A tender Canadian-style meatloaf with oats, onion, Worcestershire and a glossy ketchup-maple glaze for classic comfort dinner energy.
Instructions
- Heat the oven to 350 F. Line a rimmed baking sheet with parchment paper or lightly grease a loaf pan.
- Stir the oats and milk together in a large bowl. Let stand for 5 minutes so the oats soften.
- Add the egg, onion, garlic, ketchup, Worcestershire sauce, Dijon mustard, salt, pepper, thyme and parsley, if using. Stir until evenly mixed.
- Add the ground beef and mix gently with clean hands just until combined. Do not overmix, or the meatloaf can turn dense.
- Shape the mixture into a loaf on the prepared baking sheet, or press it lightly into the loaf pan without packing it tightly.
- Stir the glaze ingredients together in a small bowl. Spread half the glaze over the meatloaf.
- Bake for 40 minutes. Spread the remaining glaze over the top, then bake for 15–20 minutes more, until the center reaches 160 F.
- Let the meatloaf rest for 10 minutes before slicing so the juices settle and the slices hold together.
Cultural Context
Meatloaf is not uniquely Canadian, but it fits comfortably into Canadian home cooking: economical, practical and made for cold nights, family tables and next-day sandwiches. Versions across the country often lean on pantry binders such as oats, crackers or breadcrumbs, then finish with a tomato-based glaze.
This recipe keeps that familiar weeknight spirit and adds a light maple note to the glaze. It is not trying to reinvent dinner. It is trying to be the thing everyone quietly hopes mom left in the fridge for tomorrow, wrapped in foil beside the butter.
Fun Fact
Meatloaf became especially popular in North American kitchens because it stretched ground meat with inexpensive binders such as oats, crumbs or crackers. In other words, it was meal planning before meal planning got a spreadsheet and a podcast.
Cook’s Tip
Quick oats give the meatloaf a tender, home-style texture and help it slice cleanly. For a richer loaf, replace some of the ground beef with ground pork. For a lighter version, use medium ground turkey and add a little oil to help keep it moist.
Trivia
Cold meatloaf sandwiches may be the real leftover prize: thick slices, mustard, pickles and soft bread turn yesterday’s dinner into lunch with a fan club.
