Lebanese Arayes (Meat Stuffed Pitas)
Lebanese arayes stuffs pita with seasoned meat, then grills or pan-crisps it until the bread shatters lightly and the filling stays juicy.
Instructions
- Add the ground beef or lamb, grated onion, garlic, parsley, 1 tbsp olive oil, pomegranate molasses, cumin, coriander, seven-spice, paprika, salt, and black pepper to a bowl. Mix until evenly combined, but do not overwork it. Lebanese-style arayes commonly use a mixture of minced meat, onion, parsley, garlic, and warm spices, served inside pita bread.
- Cut each pita in half to make pockets. Open each one gently and spread a thin, even layer of the meat mixture inside, pressing it right to the edges. Keep the layer fairly thin so the meat cooks through before the bread overbrowns. Recipes and guides for arayes repeatedly stress a thin layer of filling and sturdy pita so the bread crisps while the meat cooks properly.
- Brush both sides of the stuffed pitas lightly with the 2 tbsp olive oil.
- Heat a large frying pan, grill pan, or cast-iron skillet over medium heat. Cook the arayes in batches for 3 to 4 minutes per side, pressing lightly with a spatula, until the pita is crisp and golden brown.
